Heirloom Tomatoes, Avocado, Cucumber, and Marinated Red Onions

Ingredients
  • 2-3 Heirloom tomatoes, different colors, cut into large chunks
  • 1 cucumber, cut into large chunks (with or without skin)
  • 1 avocado (cubed)
  • ½-1 red onion, sliced
  • high quality olive oil
  • red wine vinegasr
  • Salt & pepper
Instructions
  1. Slice onion and spread in bottom a shallow dish. Generously salt the onions and cover with red wine vinegar. Let sit for a ½ hr to an hour.
  2. Place cut up tomatoes and cucumbers in a bowl. Generously salt and pepper. Drizzle with olive oil.
  3. With a slotted spoon remove onions from the red wine bath and add to the tomatoes. Stir together and add in avocado. Taste and if desired add a little bit of the leftover red wine vinegar to the salad.
