BBQ Chicken Quinoa Casserole

Ingredients
  • BBQ Chicken Casserole
  • 2 cups cooked and shredded chicken
  • 1 cup quinoa, dry
  • 2 cups shredded cheese
  • 1 ½ cup bbq sauce (I used Sweet Baby Rays – my favorite GF BBQ sauce)
  • ¼ cup red onions, chopped
  • 1 can black beans, drained and rinsed
  • 1 can corn, drained
  • Cilantro, chopped
  • 1 green onion, sliced
Instructions
  1. Preheat oven to 350. Cook 1 cup quinoa according to directions on pkg.
  2. Once quinoa is cooked add chicken, 1 cup cheese, 1 ½ cup bbq sauce, red onion, black beans, corn, and a handful of chopped cilantro to quinoa and mix thoroughly.
  3. Place mixture into large casserole dish. Sprinkle ½ -1 cup cheese over top of casserole. Cook for 20-30 min until cheese is melted.
  4. Drizzle with additional BBQ sauce, cilantro, and green onion and serve.
