Easy Corn Chowder

Ingredients
  • 2 potatoes, rinsed and diced
  • 1 onion, diced
  • 6-8 slices of GF bacon diced
  • 1 red pepper
  • 2 cans creamed corn (check that GF)
  • 1 can corn, drained (or fresh or frozen)
  • 1 TBSP gluten free flour (optional)
  • 2 cups skim milk
  • ½ - ¾ cup hard cider or water
  • Green onions, sliced for garnish
  • Salt and Pepper
Instructions
  1. In a large stock pot, cook bacon and onions until bacon is slightly brown.
  2. Add red peppers, stir and cook for 1-2 minutes. Add potatoes, cider (or water) and season with salt and pepper.
  3. Cook for 5-10 minutes stirring often until potatoes have cooed and turn golden, add additional cider/water if needed. Stir a tablespoon of GF flour in if desired – if you prefer it not as thick then omit.
  4. Add milk, creamed corn, and corn and cook on medium for 15 – 20 minutes.
  5. If soup comes to a boil turn down to low. Season to taste with salt and pepper. Serve and garnish with green onions.
