In a large stock pot, cook bacon and onions until bacon is slightly brown.
Add red peppers, stir and cook for 1-2 minutes. Add potatoes, cider (or water) and season with salt and pepper.
Cook for 5-10 minutes stirring often until potatoes have cooed and turn golden, add additional cider/water if needed. Stir a tablespoon of GF flour in if desired – if you prefer it not as thick then omit.
Add milk, creamed corn, and corn and cook on medium for 15 – 20 minutes.
If soup comes to a boil turn down to low. Season to taste with salt and pepper. Serve and garnish with green onions.
