Prepare crema by combine the 7 ingredients for the crema in a small bowl and set aside
Combine cumin, coriander, smoked paprika, ground red pepper, salt, and garlic powder in a small bowl. Sprinkle spice mixture evenly over both sides of fish.
Place fish on a baking sheet coated covered with aluminum foil and spray with cooking spray (make sure GF). Bake at 425 for 9-10 minutes or until fish flakes easily when tested with a fork. Remove fish from pan and break into pieces with a fork.
If desired mix cabbage with some lime and cilantro.
Serve fish with tortillas, cabbage, and crema.
