Easy Grilled Mixed Veggies

Ingredients
  • 1 Red onion, cut into ½ inch pieces
  • 1 Zucchini/Summer Squash, havled and sliced
  • 1 Red, green, or orange pepper, cut into chuncks
  • 1 buch of asparagus cut into 2 inch sections
  • Olive Oil
  • Salt & Fresh ground pepper
  • Grill Basket
Instructions
  1. Chop/cut all veggies.
  2. Preheat grill and place grill basket on the grill as it is warming up (you want the basket to be hot when you add the veggies).
  3. Place all cut veggies in a large ziploc back. Drizzle with 1-2 Tbsp of olive oil and season to taste with salt and pepper. Shake bag until veggies are covered with olive oil.
  4. When grill is hot empty veggies into grill basket and grill for 12 - 18 minutes. Be sure to shake grill basket (make sure to use a grill mit) or stir/flip twice during grilling. Serve!
  5. NOTE: You can use any veggies you like, but I almost always include some type of onion
