Roasted Sweet Potatoes and Brussels Sprouts

Ingredients
  • 2 sweet potatoes, peeled and cut into chunks
  • ½ - 1 lb brussels sprouts, trimmed and halved
  • ½ red onion, thinly sliced
  • 3 cloves garlic, minced
  • 3 Tbsp olive oil
  • Salt & Pepper
Instructions
  1. Preheat oven to 400 degrees.
  2. Toss sweet potatoes with 1 Tbsp olive oil. Place on parchment lined cookie sheet.
  3. Heat remaining 2 Tbsp olive oil in a skillet. When hot add brussels sprouts and saute for 3 minutes.
  4. Add onions and garlic and cook for a minute more. then add to the sweet potatoes and spread on cookie sheet and season with salt and pepper.
  5. Bake for 18 minutes until potatoes are soft.
